Quinoa Salad

My roomie got some beets thinking they were radishes the other day, and lucky for me, she doesn't like beets. Sooo what to do? I boiled the beets, cooked up some quinoa, and came up with a delicious summer salad.

Quinoa, Beets, and More
- Cook up some quinoa (depending on if you want extras or not, I made about 2 cups - cooked)
- Boil some beets (about 30 minutes - or until fork-tender)
- Chop some fresh baby spinach
- Take the cooked beets (dice them) and quinoa - add the spinach
- Add pecans and dried cranberries
- Toss in some feta cheese
- Pour in some balsamic vinegar
- Mix it up, and voila!
